North Tynedale, in which Wark is located, was part of Scotland until 1296. Robbie Burns visited Hexham on his tour of the Borders in May 1787. Burns Night celebrates the anniversary of Burns' birth. Burns' Address To the Haggis was his first poem to appear in a newspaper (in December 1786).

This is an original 19th century menu by Scottish Chef Meg Dodds and was prepared for the first Edinburgh Burns Club meeting in the early 1800's. Meg Dodds was a Scottish 'Mrs. Beeton' and was acclaimed for her Cooks and Housewives Manual of 1826 which made her into a celebrity chef.
